It’s spring and we can’t wait to get our hands on some veggies. But there’s nothing to harvest yet, right? Surprise! There actually is! Last fall, we covered up a row of carrots with straw to insulate them from the cold. Winter snow on top provided an extra layer of protection. Now that the snow has melted, we can get out and harvest fresh spring carrots. What a great way to store carrots overwinter!
